Licorice root
plant is an herbaceous perennial of the legume family that is native to Asia
and southern Europe. The licorice roots
are brown, straight and wrinkled, with yellow inside and has a bitter-sweet,
sharp, anise-like and earthy flavour. Licorice root cuts have a sweet, warm and
somewhat medicinal aroma.
Licorice is used in Moroccan and Asian cuisines and is most
commonly known for its inclusion along with sugar, water, gum, flour and in
licorice confectionary. Licorice root is used in Chinese cooking along with
Star Anise, Szechuan Pepper and Ginger, in pork and duck recipes. Chopped
Licorice root may be added sparingly to sweeten compotes of fruit, rhubarb
stew, tart plums, apples, other fruit and baked goods. Licorice also works well
with savoury dishes like seafood, specially octopus. Licorice powder is used to
flavour creams and ice creams. Licorice is also in Irish Guinness and Italian
Sambuca.
Licorice tea has become very popular recently. Licorice Root
